A Wisconsin Fish Boil

Tonight we had our 1st Annual Family Corn Roast
and Fish Boil,
featuring sweet corn, red potatoes and onions from the garden.
The corn soaked in salt water for 20 hours, and then was roasted over the open fire until it looked like it was totally burnt.
    








The little bit that chars is actually the best part.
Roasted corn has just enough of a different taste
than boiled corn that it is totally worth the effort.








Usually a fish boil uses whitefish or lake trout.
We substituted a fresh caught King Salmon.

For 10 people
Bring to a rolling boil, 2 gallons of water
1 cup salt
3 Tbl. Old Bay Seasoning
(in the seasoning section at grocery store)
3 bay leaves
1 Tbl. ground white pepper

Add 20 whole small red potatoes and 6 carrots.
Boil 15 minutes.

Add 10 medium peeled whole onions
Keep boiling 10 more minutes.

Add salmon serving size chunked, with skin on.
(Ours was a 14 lb-er)
Keep boiling 10 more minutes.

Serve with melted butter.

Simple Salmon

     Rick (my husband) has started to fish for salmon on Lake Michigan.  This Sunday was our first taste of fresh salmon on the grill.  As my son put it, (as he was taking a bite), "this isn't even 9 hrs. since he was swimming".  That's pretty fresh.  Here's our absolute favorite way of having salmon.

Simple Salmon

1/4 cup olive oil
1/4 cup soy sauce
1/4 cup dijon mustard
2 TBL. brown sugar
1 tsp. rice vinegar

6 salmon fillets -- no skin, about 1 inch thick, serving size

Mix all ingredients except fish in a bowl.  Pour into a gallon size resealable bag and add the fish.  Turn the bag over and over to make sure all the fish is coated.  Refrigerate for 1/2 hr.

Remove fish from the bag and discard marinade.  Cook over the grill for about 5 minutes per side.

Even a colorful dish towel won't make a jar of canned salmon look good :-)
     After looking at that aren't you all just watering at the mouth to try this recipe?  Heads up though, if someone offers you a jar of canned salmon, even if it looks like this (it will), gladly accept it!  We are talking good eating!

     This is the first year I have canned all the excess salmon from my husband's summer fishing.  He fishes Lake Michigan aboard his boat the "Salmon Slayer".  He got his captain license last spring, and takes people out on charter fishing trips over the summer.  Fishing and hunting, his two passions......we eat it all.

     My kids and I have found out how easy a meal can be by opening a jar of salmon, usually using it just like tuna.  But, this is one of my favorite recipes. 

Salmon Patties

1 pint jar of canned salmon (or 1 can from the store)
1 egg
1/3 cup onion, minced
1/2 cup flour
1/2 tsp. seasoned salt
1 1/2 tsp. baking powder
1 1/2 cups oil (or lard) for frying.

Drain the salmon, save 2 TBL. of liquid in a small bowl














Mix together the salmon, egg, and minced onions till sticky.















Stir in the flour and seasoned salt (which I forgot in the picture - just

Stir baking powder into the saved salmon juice. Then stir into salmon mixture.














Form into 4 patties.  Fry until golden brown


Crispy, crunchy yummy.

The Best Fish Batter

The Best Fish Batter

1 tsp. onion powder
1 1/2 - 2 tsp. garlic salt
1 - 1 1/2 tsp. seasoned salt (I use the one from the health food store with no MSG)
pepper to taste
2 cups flour

Place all ingredients in a plastic bag and shake well to mix up.

In a small bowl, whisk an egg with a fork, add a dash of milk (a couple TBL.)  Coat the fish in the egg, and drop into bag.  Shake to coat.  Pan fry the fish or deep fry.

(We had perch tonight ----- yum..!)

Perch Are Biting

      It's fa-r-e-e-z-i-n-g with the windchill today, and my husband has decided to go perch fishing on frozen Shawano lake.  Well, you have a good time honey, I'm staying right here by the fire. :-)  He will come home with a catch though.  He gets excited to eat perch and I appreciate all the extra protein I will cook up for the chickens.
     With feed prices climbing higher and higher for the chickens and ducks I have been actively trying to figure out how I will feed my little flock off the land.  I can grow grain, and forage berries etc., but protein becomes the issue.  Without enough protein they won't be laying eggs.  In the summer when they are foraging for themselves it's not a problem, worms/bugs = protein.  Winter is harder. Organic soybeans work -- I will soak them overnight and then cook them up for them (along with anything else I'm clearing out of the freezer or refrig that day).  I will get extra eggs the next day, but soybeans I really try to use sparingly.  They can be allergenic, and around my grandbabies I'm cautious.  If the chickens are eating soy, the eggs could be a problem.
    That brings me back to the perch.  When Rick cleans the perch, the females will be full of eggs.  One of these days I'm going to try the Fish Egg Patties recipe I found -- super nutrition :-), but right now I will cook those eggs and the heads and skeleton of the perch until the bones are super soft, and feed it to the chickens.  Free protein! They will go crazy for it.  I love watching happy chickens :-)
